Impostare il comando per lanciare l'editor desiderato nella variabile
 $EDITOR

Inserendo il comando

 export EDITOR="joe"

nel file .bashrc o .bash_profile

Per farlo a livello di sistema:
 sudo update-alternatives --set editor /usr/bin/vim.basic
